Ingredients:
* 4 pork chops (boneless)
* 1/2 cup soy sauce
* 1/4 cup honey
* 3 tablespoons rice vinegar
* 2 tablespoons fresh ginger, grated

* 1 watermelon, seeded and diced (about 1 cup)
* 1 red onion, diced
* 1 jalapeño pepper, seeded and minced

Instructions:
1. Preheat your oven to 375°F (190°C) and place a wire rack over a baking sheet. Season the pork chops with salt and pepper on both sides.
