Steps
Make Green Chile Stew with Pork Recipe
Ingredients:
- 1 lb boneless pork shoulder, cut into cubes
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 green chile pepper, diced
- 1 can (14.5 oz) diced tomatoes, drained
- 2 cups chicken broth
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Cilantro for garnish
Instructions:
1. Preheat oven to 350°F.
2. Heat oil in a large Dutch oven over medium heat. Add pork cubes and cook until browned on all sides, about 5 minutes. Remove pork from the pan and set aside.
3. In the same pan, add onion, garlic, and green chile pepper. Sauté for about 2 minutes or until the vegetables are softened.
4. Add drained diced tomatoes, chicken broth, ground cumin, salt, and pepper to the Dutch oven. Stir well to combine all ingredients.
5. Bring the mixture to a simmer and reduce heat to low.
6. Place pork cubes back into the Dutch oven and stir well to coat them with the stew.
7. Cover the Dutch oven with aluminum foil and transfer it to the preheated oven.
8. Bake in the oven for about 1 hour or until the pork is tender and falls apart easily with a fork.
9. Remove the Dutch oven from the oven, remove the aluminum foil, and garnish with cilantro.
10. Serve hot with your favorite bread and enjoy your delicious green chile stew with pork!
Tips:
- If you don't have a Dutch oven, use a large pot instead.
- You can substitute pork shoulder with any other cut of meat like beef or chicken.
- Adjust the seasoning to your liking by adding more cumin, chili powder, or garlic.
- Serve with your favorite cheese or sour cream for added flavor and creaminess.
