Cut the bacon in half lengthwise, and then cut it into 1/4-inch strips. Place the strips of bacon on the inside of each of the breast halves. Roll each piece of chicken up and tie the ends with kitchen twine. Heat the oil in an air-fryer over medium-high heat until it's shimmering. Remove the pan from the heat and set aside to drain. To make the filling, mix together the flour, salt, pepper, paprika, oregano, parsley, garlic powder and thyme. Add the mixture to the fried chicken and toss to coat.
