  1. Heat the oil in a large skillet over medium-high heat. Add the eggplant and cook, stirring occasionally, until tender, about 10 minutes. Remove from the heat and set aside to cool slightly. In the same skillet, add the garlic and saute until fragrant, 1 to 2 minutes more. Stir in the tomato paste and simmer, scraping up any browned bits from bottom and sides of the skillet as you go. Season with salt and pepper to taste.
