  1. To prepare a curried sweet potato latkes recipe, cut the sweet potatoes in half lengthwise and scoop out the seeds. Cut each half into 12 inch cubes. Heat the oil in the skillet over medium-high heat. Add the chopped onions and saute until softened, about 5 minutes. Remove the onions from the heat and add the ground cumin and coriander. Cook, stirring frequently, until the onion is translucent and the spices are fragrant, 2 to 3 minutes more. Stir in 1/4 cup of the cooled sweet onion mixture and 2 tablespoons of kosher salt. Season with the remaining 1/2 teaspoon of salt and 1/4 teaspoon each of ground cinnamon and nutmeg. Serve warm with sour cream or chutney.
