Step 1: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic and cook until soft and fragrant.
Step 2: Add the chicken to the skillet and cook until browned on all sides. Remove from heat and set aside.
Step 3: In a slow cooker, combine the chicken broth, dried thyme, salt, and pepper. Add the cooked chicken to the slow cooker.
Step 4: Cover and cook the chicken and broth mixture on low for 6-8 hours.
Step 5: While the chicken is cooking, prepare the dumplings. Take a wonton wrapper and place a spoonful of ground pork in the center. Fold the wrapper over the filling to form a triangle.
