Ingredients:
- 2 lbs boneless, skinless chicken thighs
- 1 large onion, chopped
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 4 medium potatoes, peeled and diced
- 1 can (14 oz) coconut milk
- Chopped cilantro and sliced jalapeno for garnish (optional)
Instructions:
1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and saute until softened, about 5 minutes.
2. Season the chicken thighs with salt and pepper and add them to the skillet. Cook for another 5-7 minutes or until browned on both sides.
3. Remove the chicken from the skillet and transfer it to a slow cooker. Add the curry powder, cumin, turmeric, and diced potatoes to the same skillet and stir to combine.
