  2. Ingredients:
  3. - 1 eggplant, peeled and diced
  4. - 2 tablespoons vegetable oil
  5. - 4 cloves garlic, minced
  6. - 1/2 teaspoon grated ginger
  7. - 1/4 cup soy sauce
  8. - 1/4 cup water
  9. - 1 tablespoon honey
  10. - 1 tablespoon rice vinegar
  11. - 1 tablespoon sesame oil
  12. - Salt and pepper, to taste
  13. - 1/2 teaspoon cornstarch
  14. - 2 cups cooked white rice
  15. - 20 wonton wrappers
  16. - 2 tablespoons vegetable oil
  17. - Chopped scallions, for garnish
  18. Instructions:
  19. 1. Heat the vegetable oil in a large skillet over medium heat. Add garlic and ginger and cook for 30 seconds until fragrant.
  20. 2. Add diced eggplant to the skillet and stir to coat with the oil. Cook for 5-7 minutes, or until tender and golden brown.
  21. 3. In a small bowl, whisk together soy sauce, water, honey, rice vinegar, sesame oil, salt, and pepper until well combined.
  22. 4. Pour the sauce over the eggplant and stir to coat. Simmer for 2-3 minutes until heated through.
  23. 5. In a small bowl, mix together cornstarch with a bit of water to form a slurry.
