To make English sweet and sour ribs beef, you'll need: 1 pound brisket, 2 pounds chuck roast, 1 1/2 cups ketchup, 1/2 cup Worcestershire sauce, and 1 teaspoon kosher salt. Heat the oil in a large, heavy-bottomed skillet over medium-high heat. Add the beef and cook, turning occasionally, until browned on all sides, 8 to 10 minutes. Remove from the heat and set aside to rest for 5 minutes, then shred with two forks. In the same skillet, heat the remaining 2 tablespoons of olive oil. Saute the onions and celery until softened, 3 to 4 minutes; add the ground beef. Cook, stirring frequently, for 2 to 3 minutes or until the meat is no longer pink. Stir in the bbq sauce and simmer, uncovered, 5 to 6 minutes longer. Season with salt and pepper to taste. Serve with mashed potatoes and gravy.
