  1. Step 1: Bring a large pot of water to a boil over high heat. Once boiling, add 8 oz of fettuccine pasta and cook according to package instructions until al dente. Drain the pasta and set aside.
  2. Step 2: In a separate pan, sauté 1 lb of shrimp in olive oil over medium-high heat for about 3 minutes until pink. Remove shrimp from pan and set aside.
  3. Step 3: Add 1 tbsp of minced garlic and 1 tbsp of grated ginger to the same pan, sautéing until fragrant. Add 4 scallions, chopped, and stir-fry for another minute.
  4. Step 4: Pour in 1 cup of shrimp stock and bring to a boil. Reduce heat to low and let simmer for about 3 minutes.
  5. Step 5: Add 2 tbsp of soy sauce, 1 tbsp of sriracha, and 1 tsp of cornstarch to the pan, stirring until well combined. Let cook for another minute or so until sauce thickens.
  6. Step 6: Add the cooked shrimp back into the pan with the sauce and stir-fry until heated through.
  7. Step 7: Serve the fettuccine pasta in a large bowl, topped with the shrimp and scallion ginger chili sauce. Garnish with chopped scallions and sesame seeds if desired. Enjoy!
