Here are the steps to make a fiery pork and winter bamboo shoots over snow rice:
Ingredients:
- 1 pound pork belly, sliced into thin strips
- 2 cups winter bamboo shoots, washed and cut into bite-sized pieces
- 2 cups snow rice
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon chili flakes
- Salt and pepper to taste
- Scallions, chopped (optional)
Instructions:
1. Rinse the snow rice thoroughly in cold water until the water runs clear. Drain well and transfer to a pot with enough water to cover it. Bring to a boil over high heat and reduce the heat to low. Cover and simmer for 20-25 minutes or until the rice is tender. Fluff the rice with a fork and set aside.
2. Heat a large wok or skillet over high heat. Add 2 tablespoons of oil and swirl it around. Once it's hot, add the pork belly strips and stir-fry for 5 minutes until they start to turn golden brown. Season with salt and pepper to taste.
3. Remove the pork from the wok and set aside. Add another tablespoon of oil and swirl it around. Once it's hot, add the garlic and ginger and stir-fry for 1 minute until fragrant.
4. Add the winter bamboo shoots to the wok and stir-fry for 2-3 minutes or until they start to soften. Season with soy sauce and chili flakes.
5. Return the pork to the wok and mix well with the bamboo shoots. Cook for 1-2 minutes over high heat until the pork is fully cooked and the dish has a nice sear on it.
6. Serve the pork and bamboo shoots over a bed of snow rice. Garnish with chopped scallions if desired. Enjoy!
