Fiesta Ranch Potatoes with Creamy Chile Dip Vegetables Recipe

Ingredients:
- 4 large russet potatoes, peeled and cubed
- 2 cups sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup chopped green onions
- 1/2 cup chopped fresh cilantro
- 1/2 tsp smoked paprika
- 1/2 tsp ground cumin
- Salt and pepper to taste
- 6 large bell peppers, seeded and cut into wedges
- 4 large carrots, peeled and sliced
- 8 oz cream cheese, softened
- 1 cup milk
- 1/2 cup chopped green onions
- 1/4 tsp smoked paprika
- 1/4 tsp ground cumin
Instructions:
1. Preheat oven to 400°F.
2. In a large pot, bring water to a boil. Add cubed potatoes and cook for about 15 minutes or until tender. Drain water and transfer potatoes to a large bowl.
3. While potatoes are cooking, prepare the creamy chile dip. In a blender or food processor, combine sour cream, shredded cheddar cheese, chopped green onions, chopped fresh cilantro, smoked paprika, ground cumin, salt, and pepper. Blend until smooth.
4. Add cooked potatoes to the bowl with the creamy chile dip and mix well. Season with additional salt and pepper if desired.
5. Line a large baking dish with parchment paper.
6. Arrange bell peppers and carrots in the prepared baking dish.
7. Spoon the fiesta ranch potato mixture over the vegetables, spreading it evenly.
8. In a small saucepan, combine cream cheese, milk, green onions, smoked paprika, ground cumin, salt, and pepper. Cook over medium heat, stirring constantly, until cheese is melted and sauce is smooth.
9. Pour the creamy chile dip sauce over the fiesta ranch potato mixture.
10. Bake in the preheated oven for 25-30 minutes or until the potatoes are golden brown and the vegetables are tender.
