### Ingredients:
* 2 lbs beef chuck roast
* 2 tbsp vegetable oil
* 1 onion, chopped
* 6 cloves garlic, minced
* 2 tbsp chili powder
* 1 tsp ground cumin
* 1/2 tsp salt
* 1/4 tsp black pepper
* 1 can (15 oz) kidney beans, drained and rinsed
* 1 can (15 oz) pinto beans, drained and rinsed
* 1 can (14.5 oz) diced tomatoes
* 2 tbsp tomato paste
* 1 green bell pepper, chopped
* 1 red bell pepper, chopped
* 2 tbsp chopped fresh cilantro
* Sour cream, for serving
### Instructions:
1. Preheat oven to 300°F (150°C).
2. Cut the beef chuck into bite-sized pieces and season with salt and pepper.
3. In a large skillet, heat the vegetable oil over medium-high heat. Add the beef and cook until browned on all sides, about 8 minutes.
4. Remove the beef from the skillet and set aside. Add the onion, garlic, chili powder, cumin, salt, and pepper to the skillet. Cook for 2-3 minutes or until the onions are softened.
