- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen rhubarb, chopped (about 1 medium rhubarb)
- 1/2 cup milk
Instructions:
1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
2. In a large bowl, combine the flour, baking powder, and salt.
3. In another bowl, beat the sugar and butter together until light and fluffy.
4. Add the egg, vanilla extract, and milk to the butter mixture and mix until well combined.
5. Add the wet ingredients to the dry ingredients and stir until just mixed.
6. Fold in the chopped rhubarb to the batter.
7. Pour the batter into a greased 9x5 inch loaf pan.
8. Bake for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
9. Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
10. Once the bread is completely cooled, wrap it tightly in plastic wrap and place it in an airtight container or freezer bag. The bread can be stored in the freezer for up to 3 months.
When ready to serve, simply remove the bread from the freezer and allow it to come to room temperature before slicing and serving. Enjoy your delicious and homemade rhubarb bread!
