French onion soup is one of the most beloved comfort foods out there. This slow cooker version will keep your family warm and satisfied throughout the day without taking up much of your time. Here's what you'll need:
Ingredients
------------
* 1 large onion, chopped
* 3 cloves garlic, minced
* 2 tbsp butter
* 2 tbsp all-purpose flour
* 4 cups beef broth
* 1 cup heavy cream
* 1 tsp dried thyme
* Salt and pepper to taste
* Sliced baguette and grated cheese for serving (optional)
Instructions
------------
1. Preheat your slow cooker on low heat.
2. Melt the butter in a large skillet over medium heat. Add the chopped onion and minced garlic and cook until they are soft and translucent, stirring occasionally. This should take around 5-10 minutes.
3. Remove the onions and garlic from the skillet and transfer them to your slow cooker.
4. Add the flour to the skillet and stir to combine with the butter. Cook for 2-3 minutes, stirring constantly, until the flour has turned a light brown color.
5. Pour the beef broth into the skillet and stir until the flour mixture is well combined. Bring to a simmer and let cook for 5 minutes.
6. Transfer the beef broth mixture to your slow cooker and add the dried thyme, salt, and pepper. Stir well to combine.
7. Cover your slow cooker and set it to low heat. Let it cook for at least 6-8 hours or overnight.
8. Before serving, use an immersion blender or a potato masher to blend or mash some of the onions until you achieve the desired consistency. Taste and adjust seasoning as needed.
9. Serve your slow cooker French onion soup hot with sliced baguette and grated cheese on top, if desired. Enjoy!
