  1. To make fresh mozzarella tortellini skewers, you'll need: Fresh mozzarella cheese, Parmesan cheese and parsley. You can also use ricotta cheese instead of mozzarella. Preheat the oven to 400?F (204?C) and line a baking sheet with parchment paper. Cut the mozzarella into 1-inch (2.5-cm) cubes. Place the cubed mozzarella in the bottom of the prepared baking dish. Sprinkle the cheese with salt and pepper to taste. Bake for 12 to 15 minutes or until cheese is melted. Remove from oven and allow to cool for 5 minutes before serving.
