Fresh Tuna and Pearl Barley with Grapefruit Vinaigrette Recipe
Ingredients:
- 1 lb fresh tuna steak
- 1/2 cup pearl barley
- 2 cups water
- Salt and pepper to taste
- 1 large grapefruit, juiced and zested
- 2 tablespoons olive oil
- 2 tablespoons honey
- 2 tablespoons apple cider vinegar
- 2 garlic cloves, minced
- Lettuce leaves for serving
Instructions:
1. Rinse the pearl barley and place it in a medium saucepan with water.
2. Bring to a boil over high heat, then reduce heat to low and cover.
3. Cook for 25-30 minutes, or until the barley is tender and all the water is absorbed.
4. Season with salt and pepper to taste, then set aside to cool.
5. Meanwhile, trim any excess fat from the tuna steak and season with salt and pepper on both sides.
6. Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil.
7. Add the tuna steak to the skillet and cook for 3-4 minutes per side, or until browned and cooked through.
8. Remove the skillet from heat and cover with foil to rest the tuna for a few minutes.
9. While the tuna is resting, whisk together the grapefruit juice, zest, olive oil, honey, apple cider vinegar, minced garlic, salt, and pepper in a small bowl.
10. Drizzle the vinaigrette over the cooked pearl barley and mix well to combine.
11. To serve, slice the tuna steak thinly against the grain.
12. Arrange lettuce leaves on plates and layer the pearl barley and tuna slices on top.
13. Drizzle more grapefruit vinaigrette over the top of the dish and sprinkle with additional pepper and salt if desired.
