Fried Chicken with Honey Mustard Vinaigrette Recipe
Ingredients:
- 8 pieces chicken drumsticks or thighs (or a mix of both)
- 1 cup all-purpose flour
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 2 eggs, beaten
- 1 cup buttermilk
- Vegetable oil, for frying
- Honey mustard vinaigrette (recipe below)
Instructions:
1. In a shallow dish, combine the flour, paprika, garlic powder, onion powder, thyme, salt, and pepper.
2. In another shallow dish, beat the eggs.
3. In a third shallow dish, whisk together the buttermilk and ½ cup of the honey mustard vinaigrette.
4. Dredge each piece of chicken first in the flour mixture, shaking off any excess. Then dip the chicken into the egg mixture, letting it sit for a few seconds. Finally, coat the chicken with the buttermilk mixture, making sure to thoroughly coat each piece.
5. Heat the vegetable oil in a large skillet over medium heat until it reaches 375°F (190°C). Add the chicken and fry for 12-15 minutes, turning occasionally, until the chicken is golden brown and cooked through.
6. Serve the fried chicken hot with a side of honey mustard vinaigrette for dipping.
Honey Mustard Vinaigrette Recipe:
Ingredients:
- ½ cup dijon mustard
- ¼ cup honey
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- Salt and pepper, to taste
- ¼ cup vegetable oil
Instructions:
1. In a small bowl, whisk together the dijon mustard, honey, apple cider vinegar, Dijon mustard, and minced garlic.
2. Slowly drizzle in the vegetable oil while whisking until the vinaigrette is smooth and creamy.
3. Season with salt and pepper to taste.
4. Serve immediately or store in an airtight container in the refrigerator for up to a week.
