Ingredients:
- 2 cups of granulated sugar
- 1/4 cup of cornstarch
- 1/4 teaspoon of salt
- 6 cups of water
- Juice and zest of 1 pink lemon
- 1 tablespoon of vanilla extract
- 2 pie crusts (homemade or store-bought)
- Whipped cream
- Sprinkles
Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a large saucepan, combine sugar, cornstarch, and salt. Add water, stirring until smooth.
3. Heat over medium heat, stirring constantly until mixture thickens. Reduce heat to low and add pink lemonade concentrate, pink lemon zest, and vanilla extract. Stir well to combine.
4. In a separate bowl, mix together the contents of one pie crust with about 1/2 cup of the pink lemonade filling, pressing it into an even layer on the bottom of a 9-inch pie dish.
5. Pour the remaining filling into the prepared pie crust, making sure to spread it out evenly.
6. Place the second pie crust on top of the filling and crimp the edges to seal.
7. Bake for 30-35 minutes or until the crust is golden brown and the filling has set.
8. Allow the pie to cool completely before slicing into pieces and serving.
9. To serve, scoop some whipped cream onto each slice of pie and sprinkle with sprinkles.
