- 1 store-bought pie crust or homemade pie crust dough
- 2 cups of frozen strawberries, hulled and sliced into thin rounds
- 1/2 cup of granulated sugar
- 2 tablespoons of cornstarch
- 1/4 teaspoon of salt
- 1/2 cup of heavy cream or half and half
- 1/2 cup of plain Greek yogurt, nonfat or low-fat
- 1 teaspoon of vanilla extract
- Optional toppings such as chopped nuts, chocolate chips, or whipped cream
Instructions:
1. Preheat your oven to 375°F (190°C). Grease a pie dish with cooking spray or butter and set it aside.
2. Roll out the store-bought pie crust or homemade pie crust dough on a lightly floured surface until it is about 12 inches in diameter. Carefully transfer the crust to the greased pie dish and press it down into an even layer. Trim any excess dough and crimp the edges with your fingers or a fork.
3. In a medium saucepan, combine the frozen strawberries, granulated sugar, cornstarch, and salt. Cook over medium-high heat, stirring frequently, until the mixture thickens and comes to a boil. Reduce the heat to low and let the mixture simmer for 2-3 minutes more, stirring constantly.
4. Remove the strawberry mixture from the heat and let it cool slightly. In a separate bowl, whisk together the heavy cream or half and half, Greek yogurt, and vanilla extract until well combined.
5. Pour the cooled strawberry mixture into the pie crust, spreading it evenly to cover the bottom of the pie. Carefully pour the yogurt mixture over the top of the strawberries, making sure to cover them completely.
6. If desired, add optional toppings such as chopped nuts, chocolate chips, or whipped cream on top of the yogurt mixture.
7. Place the frozen strawberry yogurt pie dessert in the freezer for at least 4 hours or overnight to allow it to freeze completely.
8. Once frozen, remove the pie from the freezer and let it sit out at room temperature for about 10-15 minutes before slicing and serving. Enjoy your delicious frozen strawberry yogurt pie dessert!
