* 2 cups all-purpose flour
* 1 cup granulated sugar
* 2 teaspoons baking powder
* 1/2 teaspoon ground ginger
* 1/4 teaspoon ground cinnamon
* 1/4 teaspoon salt
* 3/4 cup unsalted butter, softened
* 2 large eggs
* 1/2 cup molasses
* 1/2 cup boiling water
* 1 cup chopped walnuts
* 1 cup raisins
* 1 cup chopped cranberries

* 1 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/4 teaspoon salt
* 1/2 cup unsalted butter, softened
* 3/4 cup brown sugar
* 1/4 cup granulated sugar
* 2 large eggs
* 2 tablespoons fresh ginger, peeled and grated
* 1 teaspoon ground cinnamon
* 1/2 teaspoon ground nutmeg
* 1/4 teaspoon ground cloves
* 1/4 cup raisins
* 3/4 cup chopped walnuts
Instructions:
1. Preheat your oven to 350°F (180°C) and line two 9-inch loaf pans with parchment paper.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
3. In a large bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy, about 2 minutes.
4. Add the eggs, one at a time, beating well after each addition.
5. Stir in the grated ginger, cinnamon, nutmeg, cloves, raisins, and chopped walnuts.
6. Gradually mix in the flour mixture until just combined.
7. Divide the batter evenly between the two prepared loaf pans.
8. Bake for 50-60 minutes, or until a toothpick inserted into the center of each loaf comes out clean.
9. Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
10. Serve slices warm with your favorite spread, such as butter or cream cheese. Enjoy!
