  1. Garbanzo Shepherd's Pie Beans and Grains Recipe:
  2. Ingredients:
  3. • 2 cans of garbanzo beans (drained and rinsed)
  4. • 1 cup of cooked quinoa
  5. • ½ cup of chopped onion
  6. • 2 cloves garlic, minced
  7. • 1 can of corn (drained)
  8. • 1 can of diced tomatoes
  9. • 1 tsp paprika
  10. • 1 tsp cumin
  11. • 1 tsp dried oregano
  12. • Salt and pepper to taste
  13. • ½ cup of grated Parmesan cheese (optional)
  14. • 2 tbsp olive oil
  15. Instructions:
  16. 1. Preheat oven to 375°F.
  17. 2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté for about 2-3 minutes or until the onion is translucent.
  18. 3. Stir in the garbanzo beans, corn, diced tomatoes, paprika, cumin, dried oregano, salt, and pepper. Bring to a boil, then reduce heat and let simmer for about 10-15 minutes or until the sauce has thickened.
  19. 4. In another skillet, cook quinoa according to package instructions. Drain and set aside.
  20. 5. Spoon the garbanzo bean mixture into a baking dish.
  21. 6. Sprinkle the cooked quinoa over the top of the bean mixture.
  22. 7. If desired, sprinkle grated Parmesan cheese over the top of the quinoa.
  23. 8. Bake for about 20-25 minutes or until the top is golden brown and crispy.
