Garlic Thyme Steak Smoked Tomato Relish Recipe
Ingredients:
- 4 cloves garlic, minced
- 1 tbsp olive oil
- 2 sprigs of fresh thyme, finely chopped
- 2 large tomatoes, seeded and chopped
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Preheat a grill or grill pan over medium-high heat.
2. Rub the steak with olive oil and season with salt, pepper, and fresh thyme leaves.
3. Grill the steak to desired doneness (about 4 minutes per side for medium-rare).
4. While the steak is cooking, make the smoked tomato relish.
5. In a small saucepan, heat 1 tablespoon of olive oil over medium heat.
6. Add the minced garlic and cook for 30 seconds until fragrant, stirring frequently.
7. Add chopped smoked tomatoes to the pan and season with salt and pepper to taste.
8. Cook the relish for 5-10 minutes, stirring occasionally, until the tomatoes have released their juices and the mixture has thickened slightly.
9. Remove from heat and stir in the balsamic vinegar, chopped fresh thyme leaves, and a pinch of salt and pepper to taste.
10. Serve the smoked tomato relish alongside the grilled steak.
Tips:
- Use a meat thermometer to ensure that your steak is cooked to your desired level of doneness.
- If you don't have a grill, you can also cook the steak in a skillet or under the broiler.
- For a smoky flavor, use smoked tomatoes instead of regular tomatoes for the relish.
- This relish pairs well with crusty bread or roasted vegetables.
