  2. * 1 cup uncooked white rice
  3. * 2 cups vegetable broth
  4. * 1 can red beans (kidney or black)
  5. * 1 green bell pepper, diced
  6. * 1 medium onion, chopped

  8. * 1 teaspoon paprika
  9. * 1 teaspoon cumin
  10. * Salt and pepper to taste
  11. * Cilantro, chopped (optional)

  13. 1. Rinse the rice in cold water until the water runs clear. Drain the rice and add it to a large pot with vegetable broth. Bring to a boil over high heat.
