Step 1: Prepare the vegetables. Cut the green beans into bite-sized pieces, trim off the ends. Slice the carrots into rounds, about the same size as the green beans. Peel and grate the ginger. Finely chop the garlic.
Step 2: Heat sesame oil in a wok or large frying pan over medium-high heat. Add the ginger and garlic and stir-fry for 30 seconds until fragrant.
Step 3: Add the green beans and carrots to the pan and continue to stir-fry for about 4-5 minutes, or until the vegetables are crisp-tender. Season with salt and pepper to taste.
Step 4: In a small bowl, whisk together soy sauce and honey. Pour over the green beans and carrots and toss until coated.
Step 5: Remove from heat and sprinkle chopped sesame seeds on top of the vegetables. Toss again to coat.
