Ingredients:
- 1 lb ground chicken breast
- 1 tbsp grated fresh ginger
- 1 tbsp chopped garlic
- 1 large egg
- 1 cup breadcrumbs
- 3 tbsp olive oil
- 1 medium onion, finely chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 6 cups chicken broth
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 cup fresh watercress leaves, chopped
Instructions:
Step 1: Preheat the oven to 375°F (190°C). In a large mixing bowl, combine ground chicken, grated ginger, chopped garlic, egg, and breadcrumbs.
Step 2: Mix everything together until well combined. Shape into small meatballs and place on a baking sheet lined with parchment paper. Bake in the oven for about 15 minutes or until golden brown.
