Making a Gingerbread and Lemon Curd Trifle Blackberry Sauce is easy and delicious! Here are the steps to follow:
Ingredients:
- 1 cup gingerbread crumbs
- 6 tbsp unsalted butter, melted
- 2 cups heavy cream, divided
- 4 tbsp granulated sugar
- 2 egg yolks
- 1/2 cup lemon juice
- 1/2 cup blackberry sauce (store-bought or homemade)
Instructions:
1. Preheat the oven to 350°F (175°C). In a medium bowl, mix together the gingerbread crumbs and melted butter until well combined.
2. Spread the mixture onto a baking sheet in an even layer and bake for 8-10 minutes or until golden brown. Allow to cool completely.
3. In a small saucepan, combine 1 cup of heavy cream, granulated sugar, and egg yolks. Cook over medium heat, stirring constantly, for 5-7 minutes or until the mixture thickens and coats the back of a spoon. Remove from heat and whisk in lemon juice.
4. In another small saucepan, combine 1 cup of heavy cream and blackberry sauce. Cook over low heat, stirring occasionally, for 5-7 minutes or until the mixture thickens and coats the back of a spoon. Remove from heat and let cool to room temperature.
5. To assemble the trifle, start with a layer of gingerbread crumbs on the bottom of a serving dish or individual glasses. Add a layer of whipped cream on top of the gingerbread crumbs.
6. Spread a layer of lemon curd on top of the whipped cream. Repeat these layers until all ingredients are used up, ending with a layer of blackberry sauce on top.
7. Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
