* 2 cups mixed vegetables (e.g., bell peppers, onions, mushrooms)
* 1/2 cup chicken broth
* 2 tablespoons rice vinegar
* 1 tablespoon pickled ginger, thinly sliced
* 1 tablespoon chopped fresh cilantro
* Salt and pepper to taste
Instructions
------------
1. Preheat your oven to 400°F (200°C).
2. In a small bowl, whisk together the soy sauce, hoisin sauce, honey, sesame oil, garlic, and grated ginger. Season with salt and pepper to taste.
3. Rub the mixture over the pork chops, making sure they are evenly coated.
4. Place the pork chops on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until the internal temperature reaches 145°F (63°C).
5. Remove the pork chops from the oven and allow them to rest for 5 minutes before slicing.
6. Meanwhile, in a large skillet over medium heat, sauté the mixed vegetables until they begin to soften, about 5-7 minutes.
7. Pour in the chicken broth and rice vinegar and bring to a simmer.
8. Add the pickled ginger and chopped cilantro and stir until well combined.
9. Serve the glazed pork chops with the pickled ginger sauce on top. Enjoy!
Tips
----
* For added flavor, you can marinate the pork chops in the soy sauce mixture for at least 30 minutes before cooking.
* If you don't have pickled ginger on hand, you can make your own by pickling fresh ginger in rice vinegar and sugar.
* You can use any combination of mixed vegetables in this dish, but make sure they are chopped into bite-sized pieces for even cooking.
