Gluten Free Rhubarb Bars Recipe
Ingredients:
For the crust:
- 1 cup gluten-free all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup packed brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened to room temperature
For the filling:
- 4 cups chopped rhubarb (about 3 stalks)
- 1/2 cup granulated sugar
- 1/3 cup packed brown sugar
- 1/3 cup all-purpose flour
- 1 teaspoon baking powder
- Pinch of salt
For the topping:
- 3/4 cup unsalted butter, softened to room temperature
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions:
1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a 9-inch square baking dish with parchment paper.
2. In a large mixing bowl, combine the gluten-free all-purpose flour, granulated sugar, brown sugar, baking powder, and salt for the crust. Mix until well combined.
3. Add the softened butter to the dry ingredients and mix until the dough comes together in a ball.
4. Press the dough evenly into the prepared baking dish and bake in the oven for 10-12 minutes or until golden brown.
5. While the crust is baking, prepare the filling by combining the chopped rhubarb, granulated sugar, brown sugar, flour, baking powder, and salt in a large mixing bowl. Stir to combine.
6. Once the crust is done, remove it from the oven and spread the rhubarb filling evenly over the surface.
7. Return the baking dish to the oven and bake for an additional 25-30 minutes or until the filling is bubbling.
8. While the bars are baking, prepare the topping by combining the softened butter, powdered sugar, and vanilla extract in a separate bowl. Mix until smooth and creamy.
9. Once the bars are done, remove them from the oven and let cool for at least 10 minutes before cutting into squares.
10. Spread the topping over the cooled bars and return to the oven for an additional 5-7 minutes or until the topping is lightly golden brown.
