  5. * 1 large head of cabbage, chopped into small pieces
  6. * 1/2 cup millet, rinsed and drained
  7. * 2 tablespoons olive oil
  8. * 1 onion, finely chopped
  9. * 2 garlic cloves, minced
  10. * 1 teaspoon salt
  11. * 1/4 teaspoon black pepper
  12. * 1/4 teaspoon cumin seeds
  13. * 1/2 cup vegetable broth
  14. * 1/2 teaspoon dried thyme
  15. * Fresh parsley, chopped
  16. Instructions

  18. ### Preparation (15 minutes)
  19. 1. In a large pot of boiling water, blanch the cabbage leaves for about 3-4 minutes, until they start to soften and turn a brighter green color.
  20. 2. Drain the cabbage leaves and lay them flat on a clean surface to cool down completely.
  21. ### Filling (15 minutes)
  22. 1. In a small saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté for about 3-4 minutes, until the onion is softened and translucent.
  23. 2. Add the rinsed millet to the pan and stir well to coat with the onion mixture. Cook for about 1-2 minutes, until the millet starts to toast slightly.
  24. 3. Pour in the vegetable broth and add the salt, black pepper, and cumin seeds. Stir well to combine and bring the mixture to a boil.
  25. 4. Reduce the heat to low and let the mixture simmer for about 10-15 minutes, until the liquid has been absorbed and the millet is tender.
  26. 5. Remove the pan from heat and stir in the dried thyme. Let it rest for a few minutes to allow the flavors to meld together.
  27. 6. Once the filling is ready, you can start assembling the golubtsi. Lay out a cabbage leaf on a clean surface, with the shiny side facing down. Spoon about 1/4 cup of the millet mixture onto the center of the leaf.
  28. 7. Fold in the sides of the leaf over the filling, then fold in the top and bottom edges. Roll the leaf tightly from the bottom edge upwards, making sure the seam is on the outside.
  29. 8. Repeat with the remaining cabbage leaves and millet mixture, until all the golubtsi are assembled.
  30. ### Cooking (45 minutes)
  31. 1. Preheat your oven to 375°F (190°C). Grease a large baking dish with cooking spray or butter.
  32. 2. Arrange the assembled golubtsi in the prepared baking dish, seam-side down.
  33. 3. Pour enough vegetable broth into the baking dish to cover the golubtsi completely.
  34. 4. Cover the baking dish with aluminum foil and bake for about 30-45 minutes, until the cabbage is tender and the filling is heated through.
  35. 5. Once done, remove the foil and sprinkle some fresh parsley over the top of the golubtsi. Serve hot and enjoy your delicious Ukrainian cabbage rolls with millet!
