* 2 cups of mixed wild mushrooms (such as oyster, chanterelle, and cremini)
* 1/2 cup of chopped onion
* 3 cloves of minced garlic
* 1 tbsp of tomato paste
* 1 tsp of dried oregano
* 1 tsp of dried basil
* Salt and pepper to taste
* 8 oz of lasagna noodles, cooked according to package instructions
* 2 cups of milk
* 1/2 cup of grated Parmesan cheese
* 4 oz of gorgonzola cheese, crumbled
* 1 cup of fresh spinach leaves
Instructions:
1. Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish with cooking spray or butter.
2. In a large skillet, cook the ground beef over medium-high heat until browned and crumbly. Drain any excess fat.
3. Add the mixed wild mushrooms, chopped onion, minced garlic, tomato paste, dried oregano, dried basil, salt, and pepper to the skillet. Cook for about 5 minutes or until the mushrooms are tender.
4. In a separate saucepan, heat the milk over medium heat until it starts to simmer. Reduce the heat and stir in the grated Parmesan cheese until melted. Remove from heat and set aside.
5. Cook the lasagna noodles according to package instructions until al dente. Drain the noodles and set aside.
6. In a large mixing bowl, combine the cooked ground beef mixture, milk and Parmesan cheese sauce, crumbled gorgonzola cheese, and fresh spinach leaves. Mix well.
7. Spread a thin layer of the beef and spinach mixture on the bottom of the prepared baking dish. Place 4 lasagna noodles on top of the sauce. Repeat the layering process until all ingredients are used up, ending with a layer of noodles on top.
8. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
