Grain bowls are the ultimate meal prep staple that are both healthy and delicious. Today we'll show you how to make a grain bowl with blackened shrimp avocado and black beans. This recipe is full of protein, fiber, and healthy fats making it perfect for breakfast, lunch or dinner. Let's get started!
Ingredients:
* 1 cup quinoa
* 2 cups water
* Salt and pepper to taste
* 1 lb large shrimp, peeled and deveined
* 1/4 cup olive oil
* 1/4 cup soy sauce or tamari
* 2 cloves garlic, minced
* 2 teaspoons smoked paprika
* 2 avocados, pitted and diced
* 1 can black beans, drained and rinsed
* 1 red bell pepper, diced
* 1/4 cup chopped cilantro
* Lime wedges for serving
Instructions:
1. Rinse the quinoa in cold water and drain well. In a medium saucepan, bring the quinoa, water, salt and pepper to a boil over high heat. Reduce the heat to low, cover, and simmer for 15-20 minutes or until cooked through.
2. Meanwhile, in a small bowl, whisk together olive oil, soy sauce, garlic, smoked paprika, salt, and pepper. Add shrimp and toss to coat. Let it marinate for about 15 minutes.
3. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and place the shrimp on it. Bake in the preheated oven for 8-10 minutes or until cooked through and blackened.
4. In a large bowl, combine cooked quinoa, black beans, diced avocado, red bell pepper, and chopped cilantro. Toss to mix well.
5. Serve the grain bowl immediately, topped with blackened shrimp. Drizzle some extra olive oil on top and squeeze some fresh lime juice over it before serving. Enjoy!
