Grandma Moyers Rhubarb and Strawberry Coffee Cake Recipe
Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup milk
- 1/2 cup melted butter, plus 1 tablespoon for greasing the pan

- Zest and juice of 1 orange
- 1/4 cup chopped fresh rhubarb
- 1/4 cup chopped fresh strawberries

Instructions:
Step 1: Preheat the oven to 350 degrees Fahrenheit. Grease an 8-inch round cake pan with 1 tablespoon of melted butter.
Step 2: In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well until evenly combined.
Step 3: Add the eggs, milk, melted butter, vanilla extract, orange zest, and juice to the dry ingredients. Mix with an electric mixer on medium speed until just combined. Be sure not to overmix.
