Grandma's Salsa Peach Kuchen Recipe
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 3/4 cup unsalted butter, at room temperature
- 2 eggs
- 1 teaspoon vanilla extract
- 3 cups peeled and chopped peaches (about 6 medium peaches)
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 3 tablespoons unsalted butter, melted
- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon baking powder
Instructions:
Step 1: Preheat your oven to 350°F (175°C).
Step 2: In a large mixing bowl, combine the flour, sugar, and butter until crumbly. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
Step 3: Press half of this mixture into the bottom of a 9-inch square baking dish. Bake for 20 minutes or until lightly golden brown.
Step 4: In another bowl, mix together the chopped peaches, sugar, cornstarch, cinnamon, and nutmeg.
Step 5: Pour the peach mixture over the warm crust in the baking dish.
Step 6: In a small bowl, combine the remaining flour, sugar, and baking powder. Sprinkle this mixture evenly over the top of the peaches.
Step 7: Drizzle the melted butter over the top of the kuchen.
Step 8: Bake for an additional 45-50 minutes or until the top is golden brown and the filling is bubbling.
Step 9: Allow the kuchen to cool before serving. Serve warm with whipped cream, if desired.
Tips:
- Make sure to use fresh peaches for the best flavor and texture.
- Don't overmix the flour mixture in step 2 or it will become tough.
- If you don't have nutmeg on hand, you can substitute with a pinch of allspice or pumpkin pie spice.
- You can also use canned peaches if fresh ones are out of season.
- For an extra touch of sweetness, sprinkle some brown sugar on top of the kuchen before baking.
