Czechoslovakian potato dumplings, also known as knödel, are a beloved regional cuisine that has been passed down through generations. This recipe is a tribute to my grandmother, who made the best knödel in the world.
Ingredients:
- 2 cups of mashed potatoes
- 1 cup of flour
- 1 teaspoon of salt
- 1 egg
- 1 tablespoon of sour cream
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of nutmeg
- 1 tablespoon of butter
- Fresh parsley for garnish
Instructions:
1. Boil the potatoes in a large pot of salted water until they are tender. Drain them and mash them with a fork or potato masher.
2. In a separate bowl, mix together the flour, salt, black pepper, nutmeg, butter, sour cream, egg, mashed potatoes, and a tablespoon of warm water.
3. Knead the dough until it is smooth and elastic. Cover the bowl with a clean towel and let it rest for 15 minutes.
4. Preheat your oven to 400°F.
5. Roll out the dough on a lightly floured surface into a thin sheet. Use a cookie cutter or a knife to cut out shapes.
6. Place the shapes on a baking sheet lined with parchment paper.
7. Brush each shape with a little bit of egg wash and bake in the oven for 15-20 minutes, until they are golden brown.
8. Serve your knödel hot with butter, sour cream, and freshly chopped parsley.
Tips:
- If you don't have a cookie cutter or knife, you can use a drinking straw to create round shapes.
- You can also add some grated cheese to the dough for extra flavor.
- Don't overmix the dough, as this will make it tough and difficult to roll out.
Grandma Vanicek's Czechoslovakian Potato Dumplings Recipe is a staple of Slovak cuisine, and it's sure to become a favorite in your household. Enjoy!
