Perogies are a delicious and traditional dish that have been enjoyed for generations. In Poland, they are often served as a main course or side dish. Here is a recipe for Grandma's Polish perogies that will take you less than an hour to make.
Ingredients

* 2 cups of flour
* 1 teaspoon salt
* 1 egg
* 1 cup of milk
* 1/2 cup of sour cream
* 1/4 cup of butter, melted
* 1/4 teaspoon black pepper
* Filling (optional)
+ 1 onion, chopped
+ 2 potatoes, peeled and grated
+ 1 tablespoon butter
+ 1 tablespoon flour
+ Salt and pepper to taste
+ 1 cup of shredded cheese (optional)

### Prepare the dough
1. In a large mixing bowl, combine 2 cups of flour and 1 teaspoon of salt.
2. Crack an egg into the mixture and beat it with a fork until it is well combined.
3. Gradually add milk to the dough and mix well.
4. Add sour cream, melted butter, and black pepper to the dough and mix well.
5. Knead the dough on a floured surface for 10-15 minutes until it becomes smooth and elastic.
6. Divide the dough into four equal pieces and wrap them in plastic wrap. Let them rest in the refrigerator for at least an hour.
### Make the filling (optional)
1. In a large skillet, melt 1 tablespoon of butter over medium heat.
2. Add 1 chopped onion to the skillet and cook until it becomes translucent.
3. Add 2 grated potatoes to the skillet and cook for 5-7 minutes or until they become tender.
4. In a separate bowl, mix together 1 tablespoon of flour, salt, and pepper.
5. Sprinkle the flour mixture over the potatoes and stir well.
6. Remove the skillet from heat and let it cool.
7. If desired, mix in 1 cup of shredded cheese to the potato mixture.
### Cut and cook the perogies
1. Preheat a large pot of water to boiling.
2. Flour a cutting board and roll out one piece of dough until it is about 1/8 inch thick.
3. Using a cookie cutter or a knife, cut out shapes of the desired size (usually circles).
4. Place the perogie shapes on the cutting board.
5. Place a small amount of filling in the center of each perogie shape.
6. Fold the edges of the perogie over the filling to create a sealed package.
7. Gently press down on the edges of the perogies to seal them.
8. Repeat the process with the remaining three pieces of dough and the filling (if using).
9. Drop the perogies into the boiling water and cook for 3-5 minutes or until they float to the surface.
