Ingredients:
- 1 pie crust (homemade or store-bought)
- 4 cups chopped rhubarb
- 2/3 cup granulated sugar
- 1 tablespoon cornstarch
- 1/8 teaspoon salt
- 1/2 cup milk
- 3 egg yolks
- 1/4 cup unsalted butter, melted
- 1 tablespoon vanilla extract
Instructions:
1. Preheat oven to 350°F (180°C).
2. Roll out pie crust on a floured surface and place it into a 9-inch pie dish. Trim off excess dough and crimp the edges.
3. In a large bowl, mix together chopped rhubarb, granulated sugar, cornstarch, and salt until well combined.
4. Pour the rhubarb mixture into the pie crust and spread it out evenly.
