Place the flank steak into the skillet with the vegetables and cook for an additional 2-3 minutes on each side until browned. Remove the steak and vegetables from the skillet and set aside.
### Step 4: Combine the sauce
In a separate saucepan, combine the beef broth, dried thyme, salt, and pepper. Bring to a boil over high heat, then reduce the heat to low and let the sauce simmer for about 5-10 minutes until reduced.
### Step 5: Transfer to the slow cooker
Transfer the flank steak and vegetables back into the skillet, then pour the beef broth sauce all over it. Make sure everything is coated evenly.
### Step 6: Cook in the slow cooker
Cover and cook on low for about 8-10 hours or high for 4-6 hours until the flank steak is tender and falls apart easily with a fork. If desired, top with shredded cheddar cheese during the last 30 minutes of cooking for an extra cheesy flavor.
### Step 7: Serve and enjoy!
Remove the slow cooker Swiss steak from the pot and let it rest for about 5-10 minutes before slicing. Serve with your favorite sides, such as mashed potatoes or rice, and enjoy this delicious comfort food!
