Green Papaya Salad Recipe
Ingredients:
- 2 cups of green papaya, peeled and shredded
- 1/2 cup of cherry tomatoes, halved
- 1/4 cup of sliced cucumbers
- 1/4 cup of chopped red onions
- 1/4 cup of chopped fresh cilantro
- 2 tablespoons of lime juice
- 2 tablespoons of fish sauce
- 1 tablespoon of palm sugar
- 1 teaspoon of chili powder
- Salt and pepper to taste
- Toasted sesame seeds for garnish (optional)
Instructions:
1. In a large bowl, combine shredded green papaya, halved cherry tomatoes, sliced cucumbers, chopped red onions, and chopped fresh cilantro.
2. In a separate small bowl, whisk together lime juice, fish sauce, palm sugar, chili powder, salt, and pepper until well combined.
3. Pour the dressing over the papaya mixture and toss to coat all the ingredients evenly.
4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld together.
5. When ready to serve, remove the salad from the fridge and give it another gentle toss.
6. Garnish with toasted sesame seeds on top, if desired.
Lemongrass Chicken Recipe
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 stalk of lemongrass, chopped
- 2 cloves of garlic, minced
- 1 tablespoon of grated ginger
- 2 tablespoons of soy sauce
- 1 tablespoon of rice vinegar
- 1 tablespoon of honey
- 1 teaspoon of cornstarch
- Salt and pepper to taste
- Olive oil for cooking
Instructions:
1. In a small bowl, mix together chopped lemongrass, minced garlic, grated ginger, soy sauce, rice vinegar, honey, and cornstarch until well combined.
2. Season chicken breasts with salt and pepper on both sides.
3. Heat a large skillet over medium-high heat and add enough olive oil to cover the bottom of the skillet.
4. Once hot, place seasoned chicken breasts in the skillet and cook for about 6-7 minutes on each side, or until fully cooked.
5. Remove chicken from the skillet and set aside.
6. Pour lemongrass chicken mixture over chicken and let it marinate for at least 30 minutes, or until ready to serve.
7. Serve green papaya salad with lemongrass chicken on top.
