  1. To prepare the split pea soup, you'll need: 1 pound (240 g) split white beans, 1 cup (250 ml) water, and 1 teaspoon salt. Bring the water to a boil over medium-high heat, then reduce the heat to medium and simmer until the beans are tender, about 30 minutes. Drain the liquid from the bean mixture and return it to the pot. Add 2 tablespoons of vegetable broth, 2 teaspoons chopped thyme, 1/2 teaspoon kosher salt and 1/4 teaspoon pepper. Simmer the mixture, covered, for 5 to 10 minutes, stirring occasionally. Taste the soup and adjust seasonings, if necessary. Serve immediately.
