  1. Cook the chicken livers in a large skillet over medium-high heat until the skin is crispy and the meat is no longer pink in the middle. Drain the fat from the pan and set aside. Add the onion and garlic to the skillet and cook until softened, 2 to 3 minutes. Stir in 2 tablespoons of the olive oil and 2 teaspoons each of salt and pepper. Cook and stir for 1 minute. Remove from heat and add the chopped parsley. Serve with sour cream and cranberry sauce.
