To prepare a southwestern breakfast burrito recipe, first preheat the oven to 350 degrees F. Cut the tortillas in half lengthwise, and then cut each half into four equal-sized pieces. Heat the olive oil over medium-high heat until shimmering. Add the onion and garlic and cook, stirring frequently, until softened, about 5 minutes. Stir in the chile flakes, cumin, chili powder, salt and pepper. Cook and stir until the onions are lightly browned and the garlic is fragrant, 2 to 3 minutes more. Remove the pan from the heat and add the eggs, reserving 2 tablespoons of the egg whites for later use.
