  1. In a large soup pot, heat the olive oil over medium-high heat. Add the onion and garlic and cook, stirring frequently, until the onions are translucent, about 5 minutes. Stir in the tomatoes, tomato paste, water, and salt and pepper to taste. Reduce the heat to low and simmer, uncovered, for 1 hour. Remove the pot from heat and add the tomato mixture. Taste the soup and adjust seasonings if necessary. Serve with tortilla chips.
