  1. Preheat the oven to 450 degrees F (232 degrees C). Lightly grease a large, heavy-bottomed saucepan with olive oil. Add the onion and garlic and cook, stirring frequently, until the onions are translucent and the garlic is fragrant, about 5 minutes. Remove the pan from the heat and add the tomatoes, thyme, oregano, and salt and pepper to taste. Cook the mixture over medium-high heat until it begins to thicken, 2 to 3 minutes, scraping up any browned bits off the bottom of the saucepan. Stir in the stock and simmer, covered, for 1 hour. Serve with sour cream and guacamole.
