  1. To make a Spanish style oxtail stew, you'll first need to prepare your ingredients. Wash and trim the scallions. Cut the pork shoulder in half lengthwise. Place the cut side down in the bottom of the slow cooker. Add the chopped onions and garlic. Cover and cook on medium-high heat until the onions are translucent and the meat is falling off the bone. Remove the pan from the stove and add the stock. Bring the mixture to boil and then reduce the heat to low and simmer for 1 to 2 hours. Serve with rice.
