Spiced Butternut Squash Stew with Couscous

  1. Place butternut squash in a large pot and cover with water. Bring to boil over medium-high heat, then reduce heat to low and simmer for 30 minutes, or until tender. Remove from heat and let cool to room temperature. Peel, core, and cut the squash into 12 inch (1.3 cm) cubes. Add the remaining ingredients to the saucepan and stir to combine. Cook, stirring, until thickened, about 5 minutes. Stir in the sour cream, thyme, salt and pepper to taste. Serve warm.
