Lightly grease the inside of the roasting pan with non-stick cooking spray. Heat the oil over medium-high heat until shimmering. Remove the pan from the heat and add the onion and garlic. Cook until the onions are translucent and the garlic begins to turn golden brown, about 5 minutes. Stir in the stock and cook, whisking constantly, until reduced by half, 2 to 3 minutes, or until thickened. Add the drained beef and stir-fry, scraping up any browned bits from bottom of pan. Season with salt and pepper to taste. Serve with sour cream and pomegranate molasses.
