If you do not have any chopped onions, then you can use diced radishes or scallions. Peel and cut the pork into 1/4-inch (1.3 cm) cubes. Place the cubed pork in the pot and add the chopped carrots and celery. Bring the mixture to boil. Reduce the heat to medium-low and simmer until the vegetables are tender and the meat is no longer pink, 20 to 25 minutes. Remove the pan from heat and stir in 1 cup of water. Allow the soup to simmer for 5 to 10 minutes, or until it has thickened slightly. Serve immediately.
