  1. To prepare a squash soup recipe, first cut the squash in half lengthwise and scoop out the seeds. Cut each half into quarters. Place the quartered squash cut side down on the bottom of the soup pot. Add the vegetable stock, water, and salt and pepper to taste. Bring to boil, then reduce the heat to low and simmer until the vegetables are tender, about 30 minutes. Remove from heat and stir in the thyme and kosher salt. Serve with crusty bread.
