  1. Place the squid in a large bowl and cover with cling film. Cover the bowl with plastic wrap and refrigerate until firm, at least 1 hour. Peel the skin off the fish and cut it in half lengthwise. Scoop out the flesh from the inside of the fillets and place them on skewers.
